The best part about this recipe is you can customize your toppings any way you like. Fry up some bacon ahead of time, and caramelize some onions. Try jalapenos or banana peppers for some spice. Change up the cheese, or try a new condiment. Add some guacamole and salsa, or even go Greek with hummus and tzatziki, tomato and cucumber slices! You could cook this recipe multiple weeks in a row and it would feel like a totally different meal each time.

  • 8 chicken burgers
  • 1 head lettuce
  • 1 red onion
  • 8 pickles
  • 4 Roma tomatoes
  • 8 oz cheddar cheese
  • mustard
  • light mayo
