Meatless Curry Recipe

This chickpea curry recipe is such a great meatless meal prep option! I make this curry usually with chicken (and you totally still could!) but this time I was kind of feeling a meatless meal for a change. Originally, I was thinking lentils but I had just made Mulligatawny with lentils so I wanted to try something else.

In the end, I decided to try using my usual curry spice blend but swap the chicken for chickpeas and I LOVE this way better than with chicken. I would highly suggest trying out this recipe even if you dont think you’d like to try a meatless recipe. I swear you won’t even miss the chicken!
