Peanut Butter Dip Snack Box

Do you need snack ideas? Do you do well during meal times but have trouble keeping things healthy between meals or after dinner? Me too! I like snacks and often have lots of snack options around the house for the kids but they aren’t exactly the type of foods I need to be consuming.

Personally, I really enjoy snack boxes or bento boxes. They’ve become really popular, you can even find snack boxes at Starbucks if you’re in a pinch! I really like snack boxes because I like lots of little nibbly options with dip or toppings to make it fun. I’ve been trying out a few different styles of snack boxes lately so I will be sharing those over the next few weeks.

Snack boxes are easy and fun to put together. You can pretty much throw whatever snacky components you have on hand into a container and be good to go! Just make sure that any wet components don’t touch the dry components otherwise you’ll run the risk of your tasty snack becoming a soggy mess! I like to keep silicone muffin liners and small dip containers handy for this reason.

When you’re selecting your snack box components try to keep it balanced, I like to always include fruit or vegetables, protein and some kind of dip (I love dip!). Anything else is optional and you can switch things out really easily. Decide if you want sweet or savory or both! Then build around that. You can add in things like crackers, pita, pretzels, pickled veggies, cheese, nuts etc.

The snack box I’m sharing with you today is a sweet box but it also has salty pretzels for balance. The Peanut Butter Dip Snack Box could be great for snack but you could even have it for breakfast or lunch on days you don’t have access to a microwave.

Ingredients

  • 4 tbsp peanut butter smooth
  • 1 cup plain greek yogurt
  • 1 tbsp honey (optional) or sweetener of choice
  • 2 apples
  • 1 tbsp lemon juice
  • 60 grapes wash and pat dry
  • 40 pretzels

Instructions

  • In a small microwave-safe bowl, measure out the peanut butter and microwave on half power in 30-second increments until reaching a runny consistency.
  • Add the yogurt and sweetener of choice to the peanut butter and whisk until smooth. Set aside.
  • Core and slice apples thinly and add to a bowl with the lemon juice and toss to coat the apples in the lemon juice to prevent browning.
  • In four containers, divide the grapes, apple slices, and pretzels. ensure the pretzels aren’t touching the fruit or they may become soggy (divide into plastic bags or separate containers if needed) 
  • Divide the peanut butter dip into silicone muffin liners and add to the snack box or divide into small dip containers.
  • Store in the fridge and enjoy!
