Cauliflower Fried Rice

I made this cauliflower fried rice recipe to serve with my turkey shiitake meatballs last week. Depending on how I felt, I would either scoop the cauliflower fried rice into the butter lettuce and then put the meatballs on top and roll it up. Otherwise, I would just eat it on the side but both ways were delicious.

The cauliflower fried rice recipe can be adapted very easily if you want to change up the ingredients. It is a good recipe to clean out your veggie drawer if you have any random veggies to use up. Add diced zucchini, mushrooms, green beans, red or green peppers, whatever you want! To turn it into an entree you may add any protein you like, my favorite is scrambled eggs or chopped crispy pork. To keep it vegetarian, add nuts or beans.

If you can find cauliflower rice, it is a bit of a time saver however it isn’t a deal breaker.  If you can’t find it, all you need to do is cut up the head into florets and pulse it in a food processor until the pieces are the size of grains of rice. Even just chopping it up by hand will do the trick but that might be a bit messy!

Cauliflower Fried Rice Recipe
Instructions
  1. Finely chop the garlic, coarsely chop the onions, and slice the green onion and set aside.
  2. In a large wok or skillet over medium heat add the sesame oil. Add the garlic and onion and stirfry until fragrant.
  3. Add the entire bag of caulflower rice and stir fry for 5 minutes. Add the frozen mixed vegetables and stir fry for 1 minute.
  4. Add the rest of the ingredients and stif fry for 3 more minutes until the liqiud in the bottom of the pan is mostly gone.
Recipe Notes

If you'd like to make this an entree there are a few options:

  • Scramble a couple of eggs (however many needed to meet your calorie allowance) with soy sauce and fold the cooked eggs into the mixture during the last step.
  • Add chopped cooked chicken or pork.
  • add chopped mushrooms, snow peas, and toasted peanuts
