Creamy Sweet Potato Curry Soup Recipe
My delicious creamy sweet potato curry soup recipe is low calorie and very easy to make. It freezes well for enjoying weeks later.

  1. In a large pot over medium heat add the butter and allow to melt. Add the onion and sautee for 5 minutes until tender. Add the curry powder and cook, stirring often for 2 minutes.
  2. Add chicken broth, sweet potatoes, carrots, salt and pepper and turn up the heat. bring to a boil, reduce heat to low and cover. Cook for 30 minutes until the veggies are very tender.
  3. Add the apple and honey and cook for another 2 minutes and then with a stick blender puree the soup until totally smooth.
  4. lastly, add the heavy cream and stir to combine. If you find the soup too thick add 2 to 4 cups of water. You should get about 2 cups per serving.
