This Turkey Shiitake Meatball Recipe is another born out of a craving and last week I really wanted Asian lettuce wraps. I love sharing lettuce wraps at restaurants, if I see them on a menu I will order them every time, especially at any of the local Chinese restaurants.  Normally for lettuce wraps, the filling is loose and you scoop it into a piece of lettuce, add sauce and enjoy. The big problem with that is its kind of messy and not very portable. I didn’t want messy work lunches so I made the mixture into meatballs instead.

To Serve The Turkey Shiitake Meatballs

To serve the turkey shiitake meatball recipe, use any kind of lettuce leaves, and top with some hoisin sauce, garlic chili sauce or sriracha. These are very low calorie so you’ll want to make some sides with this. I baked some sweet potato fries and cauliflower fried rice for sides this week. For the sweet potato fries, I tossed the peeled and cut sweet potatoes in a little vegetable oil and salt and pepper and baked them. For the cauliflower fried rice, I stir fried caulifornia snow picked up from Costco, some mixed frozen veggies, onion, garlic, sesame oil and soy sauce.

Even though this recipe is designed for meal prep, this would be a great appetizer for parties! Half the size of the meatballs when rolling and serve wrapped in lettuce on a little skewer with hoisin to dip on the side! YUM! Learn about how to eat healthy at parties here.

Instructions
  1. fill a medium sized bowl with water and add the dried shiitake mushrooms. Allow the mushrooms to sit in the water for 30 minutes to reconstitute.
  2. Preheat oven 400F
  3. When the mushrooms are dine soaking remove them from the water and squeeze out the excess water. Cut off the stems, they will be tough.
  4. Chop the mushrooms into small pieces and slice the green onions.
  5. In a large bowl add all the ingredients and use your hands to combine.
  6. Roll the turkey mixture into 16 large meatballs and place on parchment on a baking sheet. Bake for 20 minutes, turning half way.
  7. Serve wrapped in butter lettuce, topped with sriracha, garlic chili sauce or hoisin sauce.
