Chickpea Curry Recipe

Chickpea Curry is a great meatless option that is flavorful, slightly spicy and very filling without being too high in calories. It is an excellent low-calorie meal prep option.

  • 1 tbsp ghee or vegetable oil
  • 4 cloves garlic crushed
  • 1 inch knob fresh ginger finely chopped
  • 1 tsp ground cloves
  • 2 tsp cinnamon
  • 1 tbsp cumin
  • 1 tsp ground coriander
  • 2 tsp turmeric
  • 2 tsp salt
  • 2 tsp cayenne more or less depending on the heat you want
  • 4 cans chickpeas drain only two of the cans
  • 1 can coconut milk
  • 1 can diced tomatoes
  • 1/2 cup cilantro chopped
  • 5 cups cooked rice


  • In a large pot over medium high heat add the ghee or oil.
  • Add the garlic, onion and ginger and sautee until fragrant.
  • Next stir in all the spices and cook for about 2 minutes.
  • Add the chickpeas, coconut milk, and diced tomatoes. Allow the curry to simmer for 30 minutes over medium low heat.
  • Serve over 1/2 cup of rice and sprinkle with cilantro.
