This is my old faithful chili recipe. It’s THE best recipe I have ever made! Every time I decide to try out a new recipe I am disappointed because nothing will ever beat this one.  Give it a try and let me know if you think there is a better recipe I need to know about!

 

Serving this chili is really simple. Top a bowl of this low-calorie beef and bean chili with some chopped green onion a tbsp of sour cream and a little shredded cheddar.

Ingredients

  • 2 tbsp olive oil
  • 3 lbs ground beef
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tbsp paprika
  • 1 tsp cayenne
  • 1 tsp salt
  • 2-4 cloves garlic crushed
  • 1 large white onions chopped
  • 2 celery stalk
  • 2 red bell peppers chopped
  • 1 can diced tomatoes
  • 1 can crushed tomatoes
  • 4 cups beef broth
  • 2 cans white kidney beans drained
  • 2 cans black beans drained

Instructions

  • In a large pot over medium-high heat add the olive oil and brown the ground beef until cooked through, about 10 minutes.
  • Add onions, garlic, and celery and cook, stirring occasionally until the onions are translucent about 5 minutes.
  • Add chili powder, paprika, cumin, cayenne pepper and salt and stir to combine.
  • Add the diced and crushed tomatoes, the red bell peppers and the beef broth. Allow the chili to come to a gentle boil and then turn the heat down to low. Simmer for 30 minutes.
  • Add the beans and allow the chili to simmer for another 15 minutes.
  • Remove from heat and portion into containers. Allow the chili to cool completely before adding lids and storing in the fridge or freezer.
