Chickpea Curry is a great meatless option that is flavorful, slightly spicy and very filling without being too high in calories. It is an excellent low-calorie meal prep option.

  1. In a large pot over medium high heat add the ghee or oil.
  2. Add the garlic, onion and ginger and sautee until fragrant.
  3. Next stir in all the spices and cook for about 2 minutes.
  4. Add the chickpeas, coconut milk, and diced tomatoes. Allow the curry to simmer for 30 minutes over medium low heat.
  5. Serve over 1/2 cup of rice and sprinkle with cilantro.
